The Blodgett COS-8G/AB is a single, full-size, gas-powered combi oven/steamer designed for commercial kitchen use, typically as a floor model. It is built with high-grade stainless steel and combines the functionality of a convection oven and a pressureless steamer in a single appliance. Key Features
Cooking Modes: Capable of cooking with hot air (convection), pressureless steam, or a combination of both (combi mode).
Capacity: Designed to hold approximately (8) 12" x 20" x 2.5" hotel pans or a combination of pan sizes, often specified for a certain number of full-size sheet pans.
Steam Generation: Features a self-contained, self-flushing fresh steam generator that introduces fresh steam into the oven cavity without pressure, which is then circulated by a powerful fan.
Controls: Equipped with a four-function selection switch for various modes and often includes a 120-minute timer and auto-shutdown features.
Construction: Built with a fully welded angle iron frame for durability, with a stainless steel front, top, and sides. The oven cavity is vented to the outside and includes an exhaust system to minimize flavor transfer between different food items.
Accessories: Commonly comes as a floor model, often including a floor stand with pan storage, a hose and spray assembly for cleaning, and a water pressure regulator.
Power: Operates on gas for heating, with 115 Volt controls for the electrical components.
