The Cres Cor Crown x Proofer CK014 is a mobile, non-insulated proofing and holding cabinet for commercial use. 
 
Versatile functionality
The cabinet can be used for two purposes: as a proofer for dough, with controlled temperature and humidity, or as a holding cabinet to keep prepared foods warm at serving temperatures.
It features a powerful and efficient heating system to maintain the proper balance of heat and humidity for either function. 
Performance and controls
Holding Mode: Operates at up to 2,000 watts to keep foods warm at temperatures up to 180°F (82°C).
Proofing Mode: Uses 960 watts to achieve temperatures ranging from 80°F to 95°F (26.5°C to 35°C), with a relative humidity of 95%.
Control Panel: The controls are accessible from outside the cabinet, allowing for adjustments without interrupting the process. It includes an easy-to-read thermometer. 
Durable construction
Body: Made from non-corrosive, high-tensile aluminum with a fully welded, extruded frame for durability and strength.
Door: Features a field-reversible Lexan door for easy viewing of contents.
Latch and Gasket: A magnetic latch secures the door, and a perimeter gasket minimizes heat loss.
